Clos Rouge is not an industrial success story. It is a story of passion, friendship and patience, born in 2013 with just 2.5 hectares of vines, driven by the energy of a couple of winegrowers, Krystel and Joël, and supported at every step by friends and family. Today, the estate covers around 13 hectares, at the heart of the Terrasses du Larzac appellation.
A characterful terroir between red ruffes, schists and Larzac freshness
The Clos Rouge vineyard flourishes at 250 metres of altitude, surrounded by garrigue and olive trees, on soils as spectacular as they are complex. To the south, the red ruffes of the Salagou, rich in hematite, bring structure and depth; to the north, the Permian schists and clay-limestone zones gain in finesse and tension. This geological contrast, combined with the thermal influence of the Causse du Larzac, creates strong day/night amplitudes. The result: slow ripening, natural balances, and wines that keep freshness and energy even under the Languedoc sun.

A committed organic viticulture, without compromise
At Clos Rouge, the vine is cultivated in organic farming, without industrial plant-protection inputs. Soil work is mechanical and manual, complemented by plant slurries and decoctions (nettle, horsetail, fern, comfrey), as a natural support for the vine. The harvests are 100% manual, in 10 kg crates, to preserve the integrity of the grape. The aim is clear: to let the fruit arrive in the cellar in its purest possible state.
A precise vinification, guided by tasting
In the cellar, no ready-made recipes. The grapes are destemmed without being crushed, then vinified with a gentle approach. Pump-overs and punch-downs are guided by tasting, to avoid any over-extraction. Infusion is favoured to obtain fine, silky and digestible substance. Pressing is done slowly, and ageing takes place in concrete vats or demi-muids, in a fully buried cellar guaranteeing ideal thermal stability. The oak accompanies the wine, it never dominates it. In 2020, Krystel and Joël built this new cellar, thanks to the support of the Terra Hominis association.
