On the historic road linking Carcassonne to Narbonne, in the heart of the Corbières, Château Jérémie is anchored in a powerful landscape, shaped by time and by people. In Fabrezan, the vine dialogues with history: in the Orbieu valley, one can still perceive the distant echo of the Cathar horsemen and the mineral breath of the surrounding hills. A living vineyard, deeply rooted
The vineyard spans nearly 68 hectares, in the Languedoc, Corbières and Corbières-Boutenac appellations. The vines, aged 7 to 80 years with a majority around forty years, plunge their roots into clay-limestone soils mixed with gravels, rounded pebbles and sandstone. This diversity of soils, combined with an altitude between 40 and 150 metres, allows a nuanced, sincere and authentic expression of the Corbières terroir. The sometimes steep topography imposes respect for the vine's natural rhythm: a large part of the harvest is done by hand, ensuring a rigorous selection of the grapes.
Fabrezan, the beating heart of the estate
The Château Jérémie cellar is located in the very centre of the village of Fabrezan. Semi-buried, it stands out for its remarkable timber frame, made by a compagnon du devoir, and was completely renovated in 2014. Its two reception docks, one entirely gravity-fed, allow precise, respectful work on the harvest, in traditional as well as carbonic maceration.

Depending on the exposure of the slopes, the estate favours the Mediterranean varieties best suited to the local climate: Grenache, Carignan, Cinsault, Syrah and Mourvedre for the reds, Vermentino and Viognier for the whites. This diversity allows the making of balanced, expressive wines, where fruit, freshness and structure find a harmonious accord. The old Carignan and Grenache are mostly trained in gobelet, while the whites are pruned in single Guyot and the reds in Cordon de Royat.
