Château Martinolles – At the historical origins of Limoux wines

One must leave the main road, follow a discreet path lined with garrigue, vineyards and olive trees, and walk alongside the Martinollet stream… and time seems to slow down. This is where Château Martinolles reveals itself, a domain deeply rooted in the viticultural history of Languedoc, where sparkling wine was born long before it became famous elsewhere.

A place steeped in history and symbolism

Château Martinolles is located in Saint-Hilaire, close to the legendary abbey of the same name. It was here, in 1531, that monks discovered the principle of sparkling wine production, well before Dom Pérignon.

This land also bears the imprint of the Cathars, whose turbulent history shaped both the landscapes and the spirit of the region. Here, every parcel seems to tell a fragment of the past.

Founded in 1898 by Antoine Vergnes, the estate became one of Jean-Claude Mas’s properties in 2011. He immediately recognised it as a patrimonial jewel to be revealed without altering its soul.

A preserved natural sanctuary

The estate covers nearly 100 hectares, a large part of which has been deliberately left to nature. Pine forests, oak trees and olive groves—over 30 hectares—coexist with the vineyards within what was once a hunting reserve, preserving a rare level of biodiversity.

This exceptional natural setting plays a key role in maintaining soil balance and preserving the freshness of the wines.

An ideal terroir for great Limoux wines

The vineyards are planted between 190 and 300 metres above sea level, mostly on north-facing slopes. Clay-limestone to sandy clay-limestone soils, combined with a distinctive climate, create a microclimate perfectly suited to the production of high-quality sparkling wines.

While Mediterranean influence is present, it is tempered by Atlantic and Pyrenean influences. This natural freshness allows for slow grape ripening, essential for producing balanced, refined and elegant wines.

Emblematic grape varieties, an honest expression

Chardonnay, Mauzac and Pinot Noir find an exceptional expression here. The grapes develop aromatic finesse, tension and complexity, giving rise to wines that are true to their origin, without artifice.

The cuvées of Château Martinolles reflect this contrasting terroir: precision, freshness and strong personality, whether in still wines or sparkling wines.

Responsible viticulture looking to the future

The vineyard is managed using sustainable farming practices, certified Terra Vitis and HVE level 3, with constant attention paid to environmental responsibility and long-term sustainability. Here, modernity accompanies history, without ever erasing it.
