Produced from a late harvest in early November followed by drying in crates for 3 weeks in our cellars. The grape variety is Melon de Bourgogne (famously used to make Muscadet). Amber yellow colour with a complex and expressive nose with notes of honey and quince. It is rich in the mouth with aromatic complexity expressed by notes of dried and candied fruits like figs. Its orangey colour is reminder of the colour of the grapes at harvest time. Its sugar/alcohol balance makes it perfect for serving with foie gras or as an aperitif.
