The Les Damoiseaux cuvée is a great Loire white wine. Made 100% from the Chenin variety, grapes from a beautiful parcel of old vines are gathered and sorted manually, plot by plot, then pressed in an old-style vertical press before the must finally undergoes maceration in vats prior to the blending of the various parcels. The second fermentation (malolactic) is carried out in part to give good balance between the natural sweetness of the Chenin and the fruitiness. Aged for 6 months, the 2014 vintage displays a wonderful tension, with aromas of quince and acacia. It will serve as a wonderful accompaniment to shellfish or certain cheeses.
