Often rewarded by the Guide Hachette des Vins, the Clos Aguilem is an estate covering a total surface area of 9 hectares located near the Larzac at 35km from Montpellier, in the West, near the Mediterranean Sea. It has been created in 2015 by Jean-Charles Auffret, oenologist and agronomist, after a career in the Champagne region, at Veuve Ponsardin. The vineyard is made of old parcels of Carignan, Cinsault, Grenache noir, Grenache blanc and Chenin and younger parcels of Mourvèdre, Syrah and Vermentino. The culture of the vines is lead in order to have limited returns and to intervene the least possible. The estate has been converting to organic practices since 2016 and its cuvees will have the AB label starting from Millesime 2019. The vinification aims at respecting the grape and revealing its fruity flavor to produce great wines.

A cuvée with a golden color and green highlights, the nose is complex and fine, with aromas of menthol, aniseed, butter and vanilla. The palate is delicate and round, with notes of honey and lime blossom and a long finish.
