This is a blend of the strength of Pinot Noir and the vivacity of Chardonnay. Immediately after harvesting, Xavier identifies the vines whose grapes could produce a great Champagne. Added to the quality of the crop is the criteria of balance between acidity and sweetness. The 2008 vintage is a round and warm wine, whereby the richness of the aromas on the palate linger into notes of mocha. Created from a single year's harvest and from a blend of different crus, this is a Champagne for cellaring.
