51160 Hautvillers - Champagne
4 generations of winemakers… Born in a family of grower-merchants, settled in Hautvilliers, Eugène and his wife, Angeline, cultivated the soil. Its their son Fernand who made his first wine and first bottle in 1903. Slowly but surely he built his stock and a growing number of loyal customers. After being in the hands of his son Robert in 1950 the Maison Lemaire is now lead by his grandson. Since 1984 Frédéric and his wife have been running Maison Lemaire with the help of their daughter Hélène. The family vineyard, located in Hautvilliers, 1st Cru, allows us to cultivate the three grape varieties from the region of Champagne : Chardonnay, Pinot Noir and Pinot Meunier. Adapted to the type of soil and to the exposition of the vine, the vineyard is worked on in regards of sustainable culture in order to guarantee the continuity and respect for the environment. A long process of elaboration/creation… From the harvest to the bottling, each of the stages are made in our cellars and made with our own care to guarantee a consistant quality of our different cuvees. We focus on the culture of the vine as it is important to harvest a high quality raw material, mandatory to elaborate our Champagnes during the harvest time. In order to protect the natural specificities of our terroir, we use a traditonnal pressing tool that weighs about 2000Kg. Our winery is composed of small and bigger containers and barrels, in order to separate the juices from our grapes, to allow us to, then, realize the assemblage step. This delicate work consists in associating the clear wines from different grape varieties and years of harvest. We will have to wait 2 to 7 more years to allow the wine to bonify in our traditional cellars, sharpened in chalk at an ideal temperature of 11 degres and hidden from the light. These are the qualities required for an ideal conservation, before offering you the final product.
