Old vines aged between 40 and 50 years old, which benefit from the exceptional sun exposure of the Clos, it is 100% Chenin that is used. Vinification takes place in barrels, followed by a period of ageing after racking.The very pale gold colour opens onto a nose with scents of white fruit. The long and full palate uncovers aromas of citrus, such as grapefruit. It will be a marvellous accompaniment to grilled fish and cheeses. ORGANIC Appellation : SAUMUR BLANC A.O.C. Terroir : Clay-limestone Variety : Chenin Vines : 30 to 35 years old Vineyard management : The vineyard operates organic agriculture Harvest : Manual, harvest sorted on a table installed over a container Pressing : Direect, whole grape Vinification : Cold racking of the must, long fermentation (around 3 months) in 2-4 wine barrels Ageing : For 14 to 15 months in barrels and then 3 to 4 months in vats. Filtration prior to bottlling. Pairings : Dry wines to be consumed as an accompaniment to hot fish (scallops, grilled lobster...) and cooked pasta Storage : 4 to 10 years
