Vinification : Harvested when over-ripened, fermentation at low temperature with fermentation being stopped by means of the addition of alcohol (mutage). Tasting : Pale yellow colour, aromas of pear and candied citrus fruits. Full and rich body with a great persistence. Food pairing suggestions : Goes well with foie gras and desserts.
