Winemaker's tasting notes : Lovely deep garnet colour. The nose is complex with ripe fruits, aromas of prunes and ginger. It is full-bodied in the mouth with delightful aromas. The structure is voluminous, the tannins are noticeable with a good long finish.Blend of Merlot 97% and Cabernet Sauvignon 3% grape varieties.Food and wine pairings : This wine can be enjoyed with grilled or plancha-cooked meats, chicken curries, lasagne, paella and with cheeses, of course! Foodies will enjoy it with desserts too.

Château Mallié Chante L'Oiseau

Château Mallié Chante L'Oiseau, a family history. Mr. Roger Mallié married Miss Josette Dupin in 1958. This son and daughter of wine-growers, who have always worked the land, set themselves up as shop-keepers from the beginning of their marriage. Their small grocery, located in Saint Macaire, was the opportunity to sell the wine, fruit and vegetables that they produced on the small plots of land. But ten years later, the local doctor gave Roger an ultimatum: "because of overwork, you have to choose between running a shop or making wine!" And you guessed it, he chose vines and wine-making. It was only later, in 1973, that Roger and Josette named their farm "Château Chante L'Oiseau", which was made up of 17 hectares. Then, in 1979, their son, Philippe Mallié, took over the estate, which then was by then 25 hectares. Later, in the 1990s, with his wife Dany, he registered the brand "Château Mallié Chante L'Oiseau". The estate continued to expand during the early 2000s, to total 36 ha of cultivated land. Philippe and Dany's children also extended it and then ended up working themselves on the estate. Julien takes care of the wine-making and working the vine. Jérémy works as a sales person in the Halles de Biarritz. Then, in February 2010, Julien based himself on the estate as a Young Farmer, as co-manager-owner. During winter 2010/2011, our family decided to react to a crisis in wine-making that had been going on for ten years. We therefore had to pull out at least ten hectares of vines to reduce production costs and thus only produce wine that we knew we could sell." Finally, 2013 was a transitional year, a year of renewal: under the drive of a new generation, our vineyard converted to organic production.
