This sparkling wine is produced via alcoholic fermentation. It is fruity, sweet and low in alcohol. Produced from the local Mauzac grape variety, this is a blanquette (the name given to Mauzac because of the white fluff on the back of the leaves). As an aperitif, at teatime, with dessert... 11250 Gardie - Languedoc-Roussillon

Domaine Les Cassagnes has been farmed by the Roger family, passed down from father to son for several generations. Over the last 40 years, Jean has restructured the whole vineyard. It has progressively passed to Thomas' capable hands. The estate is made up of 46 hectares of land today, 36 ha of which have vines. It extends over the Limoux appellation, over the communes of Gardie, Villebazy and Saint-Hilaire, in the heart of Mediterranean country. It was in the village of Saint-Hilaire that Benedictine monks discovered the first sparkling wine in the world in 1531. Our terroir is at the crossroads of Mediterranean and Oceanic influences between Carcassonne and the Pyrenees. Summers are dry, warm and blown by the wind, allowing the grapes to easily ripen. Nights are cooler and this temperature difference is ideal, especially for Chardonnay and Pinot Noir varieties. We have practised sustainable and integrated vine growing methods for a long time, and in 2017 we also joined a GIEE (Economic and Ecological Interest Group): local organic fertiliser, bee protection, etc. We are mindful of combining protection of the environment and health, preservation of the landscape and economic profitability; with the desire that our wines remain accessible to as many as possible! Passionate about the terroir and vine history, Thomas, 33 years old, is inexhaustible on the subject. He wants to develop wine tourism with a museum of old vine tools, tasting lessons, walks through the vines and more. We are Owner-Harvesters.
