Cuvée Prestige ***Medal-winner at the Concours Général Agricole de Paris 2017*** Colour: Transparent, powdery pale pink. Nose: A floral explosion of violet and rose, softened by the delicate fruitiness of lychee and citrus, and original, complex and sweet aromatic character. Palate: This gastronomic rosé, which is best waited on for a few months, has lovely full and voluptuous flesh with spicy floral fragrances of violet and fresh mango aromas, on a dense mineral texture that lingers into a long and silky finish. Harvesting: Plot selection, sorted in advance at the vine. Manual harvesting in crates. Vinification : Cooling of the harvest using a tubular exchanger and dry ice, cold pressing under neutral gas following short pellicular maceration with separation of the free-run juice (the presses having been discarded), settling, fermentation in a temperature-regulated stainless steel cask, at low temperature.
