A great classic, this wine from the Commanderie de Peyrassol is produced from vines, the average age of which is around twenty-five years old. Perfectly well-suited to high-quality Provence cuisine, this wine can found in cellars owned by private individuals, just as much as on the shelves of distinguished cellar masters, or on the wine lists of the best restaurants. Cépages: 27% Cinsault - 22% Syrah - 20% Grenache - 15% Mourvèdre - 10% Cabernet Sauvignon - 6% Rolle & Ugni Blanc. Viticulture: Integrated agriculture. Mechanical harvesting at night. Yield : 50Hl/Ha. Vinification: Selective sorting of the harvest. Destemming, direct pressing or cold pellicular maceration for several hours. Fermentation under regulated temperature, in stainless steel vats, with varieties separated. Ageing: In stainless steel vats and bottled in February 2016. Tasting: Clear, brilliant colour. Pale pink colour with bluish hues. The nose is very expressive : Notes of spice combine with various red berries (blackcurrant, redcurrant, wild strawberries) and peach melba, with lemony notes in the finish. The palate is crisp, initially mineral and then with delicious fruit. The finish is marked by delicacy and slight minerality.
