Rosé with a pale colour, of which the aromatic palate is a genuine awakening of the senses, with floral nuances of lilac and rose, scents of lemon, peach and passion fruit. The palate is both tender and fresh, and flourishes with an abundance of elegance, delicacy and balance. A true delight! To be sampled with a fillet of sea bream or a risotto. The 2016 vintage presents an elegant blend of Mourvèdre, Grenache and Cinsault, which gives it added freshness and complexity!

Minuit 2017 est un régal tant pour les yeux, le nez, que pour le palais. Sa robe rose pâle annonce un nez plein de fraîcheur et de gourmandise aux notes d'agrumes, de fruit de la passion et de nectarines. En bouche, il fait preuve d'un très bel équilibre et d'une belle tension. Sa finale persistante et acidulée lui permettra de se marier à merveille avec un dos de cabillaud mariné au citron vert, des pâtes fraîches au saumon fumé ou tout simplement en apéritif.

Domaine de la Cendrillon is a family estate passed down the generations for more than 250 years. Robert Joyeux — the current owner — represents the 7th generation. Located in the Corbières in southern France, very close to Carcassonne and Narbonne, the estate has 50 ha of vines, including 15 ha of young vines (2-15 years old). Convinced that all great wines come from a healthy, vibrant environment, the estate converted to organic production and obtained ECOCERT certification in 2013. This approach imposes extreme care for the vines to obtain healthy grapes with delicious juice. The planting of "exotic" varieties (Albarinho, Verdejo) and the enlargement of the winery has resulted in vinifications where each plot can express its originality. Thanks to the diversity of these terroirs and varieties (Syrah, Grenache, Mourvèdre, Carignan, Cinsault and also Merlot, Marselan and Petit Manseng), the Cellar Master has at his disposal very rich colours and exceptional aromas, which ensure the production of fresh, balanced, fine and elegant wines.
