Very often, our rosé is produced from a blending of our young Cabernet grapes with those from other parcels of thhe same variety harvested quite early to retain a good balance between the taste of the pulp and a slight acid freshness. We then process it using direct pressing, because the skin is not yet ripe and so must be removed as soon as possible. Therefore, the maceration is restricted to a few hours only, to take in a little colour. Once in the vat, the fermentation is carried out slowly using temperature control. Great precision is required at these stages to avoid any oxidisation which could damage the fruit.

15km from Bordeaux, 22km from St Emilion, in the Entre-Deux-Mers region, Château de Camarsac, known as the “Prince Noir” (Black Prince), was built in the 14th century. Thierry Lurton's goal is the symbiosis of history, humans and the terroir, just like the relationship between a chef and his garden!
