Château de Lardiley is a 30-hectare property spread over several communes that is organically cultivated. The parcels that produce these exceptional rosés are in the heart of Entre-Deux-Mers in the village of Saint Pierre de Bat. Produced from 100% Sauvignon Blanc grape variety This refined sparkling wine, with its yellow colour and green glints, is complex with aromas of blackcurrant buds, citrus, ripe grapes and exotic fruits. It is rich and supple in the mouth, enlivened by honest and superb lemony vivacity that sharpens the taste buds. WINE AND FOOD PAIRINGS: Aperitif. Grilled fish and fresh salads. Blue cheese and light tarts. SERVING TEMPERATURE: 10° C    GRAPE VARIETY : 100% Sauvignon Blanc  YEAR : 2015  LOCATION : A terroir with argillo-calcareous soil cultivated using organic techniques in the heart of the Entre Deux Mers region. DENSITY : 5,000 Vines/Ha PRODUCTION PROCESS Mechanical harvest.: 6 mornings between 10 and 25/09/2015. Draining and pressing Ageing : On lees for 1 month before stabilisation Yeasting with special aromatic white yeasts. Fermentation between 16°/17° C for 14 days. Wine rested for 1 month in stainless steel vats. Racking. Stabilisation. Filtration. Bottling. Founded in 1890, the Lataste vineyard has been continually developing over the generations and, above all, since the beginning of the 20th century, a period when Evrard Lataste gave the property its current dimensions and began bottling wines on the estate.
