What should you drink with Bò Bún?

Vietnamese cuisine is packed with flavour, abundant in vegetables and places great emphasis on aromatic herbs and spices.

Bò Bún (in Vietnamese, Bò = beef and Bún = rice glass noodles) is a delicious dish originating from the South of Vietnam made of cold rice glass noodles, raw vegetables, various aromatic herbs and strips of beef sauteed with lemongrass and fried just before serving. Over the last ten years, it has become trendy to add a few crispy spring rolls to the dish.  

This whole dish is a balanced, healthy, refreshing and most of all easy to prepare meal. But what wine should you drink with Bò Bún? First of all, we do not recommend red wines that are woody or too powerful, which could overpower the dish's many aromas (lemongrass, mint, coriander). You are better off with a light red wine with a beautiful acidity and a touch of minerality such as a Chinon or a Côte de Nuits Village.  

For a white wine, it is best to avoid sweet white wines that will be too heavy against the Bò Bún's fine and delicate flavours. So opt for a dry white wine with a beautiful aromatic taste, a controlled acidity and a touch of minerality. Riesling or dry Gewürztraminer from Alsace will be ideal to drink with Bò Bún with their delicate hints of exotic fruits, flowers and spices.
